Executive Pastry Chef Job DescriptionAs the Executive Pastry Chef at Dominique Ansel Bakery, you will be responsible for overseeing the daily operations of our bakery and restaurant. This includes managing the selection, development, and performance management of our team, as well as ensuring that our guests have a world-class customer service experience.Key Responsibilities:

  • Bakery Operations: Oversee and manage all areas of our bakery, ensuring compliance with operational standards, company policies, and health and safety laws.
  • Shift Management: Manage shifts, including daily decision-making, scheduling, and planning, while upholding standards, product quality, and cleanliness.
  • Inventory Management: Responsible for setting daily pars for pastries, viennoiserie, and MTO and restaurant items in coordination with the General Manager and Executive Chef.
  • Menu Development: Meet all deadlines for the development of new menu items.
  • Events and Collaborations: Oversee and lead all outside events and chef collaborations.
  • Production and Quality Control: Oversee the production of all items for the bakery and restaurant, including special orders and events.
  • Reporting and Administration: Complete all end-of-day and daily reporting in a timely and complete manner.
  • Waste and Inventory Management: Manage waste and inventory logs.
  • Vendor Management: Work with vendors to negotiate the lowest possible prices for all items.
  • Training and Development: Ensure all employees are providing world-class guest service by providing them with hospitality training, one-on-one, and personally re-training any employees who do not meet company standards.
  • Sanitation and Maintenance: Keep excellent sanitary practices in line with DOH standards for food handling, general cleanliness, and maintenance of kitchen and dining areas, and train the team to do the same.
  • Team Management: Interview potential new team members, direct hiring, supervision, development, and, when necessary, discipline of employees (verbal and written warnings).
  • Product Development: In coordination with the Dominique Ansel Corporate Team, lead the development of new products on the store level and ensure that development follows all timelines and deadlines.
  • Equipment Maintenance: Complete regular maintenance walk-throughs of the space to ensure all equipment is working properly, and take the lead on all repairs for equipment.
